생물참치 해체모습 담아왔습니다!
일단 비위 약하신분들은 안보시는게 좋을것 같습니다.
냉장이나 냉동이 아닌 생물을 해체하다보니 피도 보이고 살점파편(;;)같은게
좀 실감나게 보이는 장면들이 많습니다. 게다가 붉은살 생선이다 보니 더 그렇구요^^;
그리고 빠른시간내에 해체한다음 보관&숙성을 해야했기에
보여주기 위한 해체작업을 못했습니다.
감안해 주시구요. 그럼 사진 나갑니다~
일단 머리부터 시작합니다. 큰 생선이다 보니 정말 뼈가
도미나 숭어 같은 애들에 비하면 장난 아니더라구요.
힘 꽉줘서 짤라냅니다.
반듯하게 잘려진 참치머리 입니다. 어두일미라고.. 먹을곳 참많은 부위죠^^
이제 몸통 해체식 시간입니다. 일단 배쪽을 시원~하게 갈라줘야 되지만,
뼈가 두꺼운 관계로 힘 많이들어 갑니다.
배쪽을 다 갈랐습니다.
이미 등쪽을 가른 상태입니다.
(등 가를때에 아버지 도와드려서 사진을 못찍었습니다..ㅜ.ㅠ. 죄송합니다!)
꼬리살부분과 뱃살부분을 나눕니다. 이작업 하실떄 섬세하시더라구요.
딱 경계가 보이는게 아니다보니, 그리고 꼬리랑 뱃살부분
맛차이가 확연하다보니 경험에서 우러나는
센스!!로 경계부분을 결정 하셨습니다.
뱃살을 들어낸 모습입니다. 이제 슬슬 호러물이 되가고 있습니다;;
뱃살&등살입니다. 사진을 기준으로 왠쪽이 뱃살이고
오른쪽이 등살입니다. 중간에 검은부분은
뼈근처로 피가 뭉쳐서 그렇습니다. 당연히 이부분은 아낌없이 버려줍니다.
한쪽 해체를 다했으니 반대쪽도 똑같이 해체작업 해줍니다.
일단 1차적으로 해체가 완료 됬습니다. 살이 많이 붙어 있죠?
이걸 어떻게 하느냐!!
숟가락으로 사정없이 긁어 줍니다! 이 아까운걸 왜 버립니까!
뼈에 붙어있는 살은 서비스로 마끼(일본식 김말이)로 나갑니다.
머리를 정확히 둘러 나눠 줍니다. 흔들려서 다행이군요;; 본격적으로 호러물 될뻔했습니다;
둘로나뉜 참치머리의 최후모습입니다. 뭔가 호소하는 듯하지만..
나중에 눈물주로 보자니까? 호홋!
꼬리부분 껍질해체 사진 1,2입니다. 날이 바짝서있는 칼로 쫙 벗겨 주는게 포인트로
이게 은근히 고난이도 작업입니다.
리얼리티가 살아 숨쉬는 사진입니다;; 이렇게 살점없이 벗겨주면 성공!
등부위 해체작업 中...
뱃살 해체작업 하고 있습니다. 일단 정말 귀한 부위인 가마살이라불리는 뽈살부위를 잘라 냅니다.

뱃살 해체작업 中 (저 검은 부위는 다들어내서 버립니다.)
이게 그 유명한 참치 뱃살!! 살짝 구워먹어도되고
회로 간장찍어 먹어도되고 초밥으로 먹어도 되고
어떻게 먹어도 입에서 살살녹는 그 뱃살입니다! 게다가 냉동이 아닌 생물..ㅡ.ㅜ
온난화는 걱정되는 거지만 이 사진을 보니 갑자기 고마워 지려고 합니다..;;
그리고 이게 대뱃살! 누구나 한번씩 들어봤을 부위고
고급 일식집이나 호텔 일식집가면 한점당 몇만원 한다는 그 부위!
(가마살이 살짝 더 비싸긴하지만^^;)
막을 벗겨내고 한컷!

이사진들 말고도 많은 장면들이 있는데 어느정도 수위 고려해서 올려봤습니다.
부위별로 몇점씩 썰어서 이쁘게 찍어 볼려고했지만,
한번 썰기 시작하면 조금이지만 신선도가 떨어진다는 아버지 말에 gg쳤습니다.
참치해체라는게 정말 시간 많이걸리고 정성이 많이 들어가는 작업이 더라구요.
한 2시간 이상걸리는것 같습니다.
해체작업만 아니라 세세한 부위별로 또다시 나눠야 하니까요
저번 참치 사왔을때 이글루스에서 보고 찾아와 주셔서 아버지가 정말 고맙고 기뻐하시더라구요.
그모습을 가까이에서 보니 제가 왜이리 들뜨고 기쁜지 모르겠습니다^^;;헤헷!
어쩔수없는 이글루스 인인가 봅니다..쿨럭;;

참고로 참다랑어(혼마구로)>눈다랑어(빅아이)>황다랑어(엘로핀)>등...순서대로
비싸고 맛있다고 보시면 됩니다.. 자세히 잘 구경하고 갑니다..^^
잘 먹었...는데 양이 많아서 마끼와 탕은 먹지도 못하고 GG ;ㅂ;!!
여튼 맜있었어용. 사장님 내외분 친절하시고 음식 싱싱 맛있어서 잘먹구 왔습니다.
여친님이 비린걸 잘 못먹는데 회며 전복이며 멍게며 나온것들 다 맜있다며 잘 먹었습니다 :>
